If Paris has a flavor, The Macallan just figured out what it is.
The legendary Speyside distillery has dropped the fifth edition of its acclaimed Distil Your World series, and this time the destination is arguably the most romantic, most storied, most gastronomically obsessed city on the planet: Paris. The result is The Macallan Distil Your World Paris — a limited edition single malt Scotch whisky with an SRP of $4,750 that’s as much an art object as it is a dram.
And yes, it’s worth talking about.
What Is the Distil Your World Series?
Before we get into the Parisian details, a quick primer. The Macallan’s Distil Your World series is a collaboration with the Roca brothers, the culinary geniuses behind El Celler de Can Roca (named the World’s Best Restaurant twice), that sets out to capture the essence of iconic global cities in a bottle. Previous editions explored New York, London, Mexico, and Hong Kong. Each one is crafted by Master Whisky Maker Kirsteen Campbell, who literally travels to these places, soaks in the culture, and then translates that sensory experience into a whisky.
It’s one of the most ambitious luxury whisky projects in the world, and the Paris edition might be its finest chapter yet.
The Bottle: Paris in a Glass
Kirsteen Campbell spent time in Paris immersing herself in l’art de la table, the deeply French philosophy that treats every element of the dining experience as an art form. We’re talking ingredients, provenance, tableware, ambiance, aromas. The full picture.
That obsession with detail translated directly into the whisky’s flavor profile.
On the nose, you’re getting almond croissants, rose, sweet nectarines, sandalwood, and vanilla pods. Close your eyes and you’re standing outside a boulangerie at 8 a.m.
On the palate, it opens into buttered pastry, brioche, peach melba, mille-feuille, and toasted oak. Think of every reason you’ve ever wanted to book a flight to Paris. That’s the taste.
The finish is long and gentle: warm oak, soft spices, and the kind of lingering elegance you only get from a whisky that was made with a story in mind.
The ABV sits at 47.2%, and the cask makeup is genuinely unique. American sherry-seasoned oak brings creamy sweetness and floral notes. European sherry casks add depth and structure. Ex-bourbon casks introduce tropical warmth. And then, the showstopper: rare Cognac casks were brought in exclusively for this release to deliver what the distillery calls “a final flourish of French refinement.” Because of course they did.
The Design Is Just as Good as the Liquid
The whisky’s natural color is called Parisian Sunrise, inspired by that golden light that spills over the city when the sun rises over Montmartre. The presentation box is finished in “street yellow,” a nod to Paris’s iconic gas-lamp streetlights and its identity as the City of Light.
The inner artwork was created in collaboration with Paris-based artist Cassandre Montoriol, whose expressive gouache illustrations depict a vivid table d’hôte scene on a classic Parisian street at dusk. It’s the kind of art you’d want to frame and hang.
The outer packaging features a sculptural map tracing Kirsteen’s journey through Paris, with key landmarks rendered in dimensional detail. As far as whisky packaging goes, this is genuinely next-level.
A Documentary, Too
The launch of Distil Your World Paris also comes with a documentary film, which follows Kirsteen Campbell and Joan Roca of El Celler de Can Roca through the streets and kitchens of Paris. They meet with notable figures including Chef Anne-Sophie Pic, artisanal baker Apollonia Poilâne, and menu collector Jérôme Dumant.
It’s a love letter to Parisian craftsmanship, and it makes the whisky taste better when you’ve watched it first.
