When I’m in Mexico, I try to eat fish as often as possible. You will almost always find “fish of the day” options on lunch and dinner menus since most resorts are just a stone’s throw away from the ocean. How can you pass up freshly caught fish every day while you’re in paradise? I know I can’t.
Villa Premiere Boutique Hotel & Romantic Getaway in Puerto Vallarta has recently opened the “Fish Market,” a sea-to-table concept created by their very own Chef Sebastian Varona and his team. The idea was to enhance how guests experience their beachfront dining with fresh ingredients straight from the Bay of Banderas and other waters near Mexico’s leading Pacific Coast culinary destination.
Here’s how it works. The Villa Premiere Boutique Hotel culinary team host a fish market where guests can pick out fresh fish and other saltwater treats caught from the Pacific they desire. The seasonal options range from mahi-mahi, red snapper, sea bass, octopus, crab, lobster, clam, scallops, and oysters. After they have chosen what they want to eat, they let the culinary team know just how they want it prepared. Whether it be grilled, fried, turned into ceviche or sashimi-style, Villa Premiere’s new “Fish Market” is sure to be a hit with seafood fans.
Villa Premiere shared with the news of the “Fish Market” a few of the favorite dishes guests are enjoying so far. They include aguachile, a traditional lime-cooked ceviche with serrano pepper; natural sashimi with ponzu; and fish filet cooked in a wooden oven with roasted vegetables. Chef specialties and do-not-miss dishes include crab cooked in a wooden oven with butter, garlic and lemon root, and Villa Premiere’s famous clam ceviche.
