The Westin Long Beach, operated by Highgate Hotels, has just unveiled the results of their mega $23 million dollar renovation. The highly anticipated update to the hotel includes their exciting new dining concept, Navy Proof Food and Spirits, revitalized modern guestrooms, and a refreshed lobby space.
The Westin Long Beach Renovation
The Westin Long Beach hotel was originally built in 1988, with 469 guest rooms and suites in total. Each of the rooms has gone through renovation to add layers of subtle texture with geometric accents over a palette of gray and gold with hints of pastel hues. To pay homage to California’s iconic scenic coastline the designers used white marble floors, custom tree canopy rugs, white oak, rich tan leather, neutral paint tones, custom art, and brass lighting elements.
“We are overjoyed with the updates and additions we were able to achieve to better serve our guests and the Long Beach community. With this, we welcome guests both near and far to take in the beauty of not only our property but the amazing city it is a part of. Whether dining at Navy Proof Food and Spirits, sipping on Bluestone Lane coffee with friends or visiting one of the many attractions nearby, we look forward to creating lasting memories in our new space for years to come.”

Navy Proof Food and Spirits
There’s a lot to look forward to when visiting the newly renovated Westin Long Beach hotel. I for one am very excited to see what Navy Proof Food and Spirits have to offer. The restaurant was conceptualized by Howe & Brown Hospitality and designed by Architect Houston Tyner and Vanrooy Creative Group, offering guests New-American fare and a world-class bartender driven beverage program. The new dining space boasts everything from a dramatic three-story sculptural chandelier and a 32×30 ft., larger-than-life living green wall, to new furniture, gorgeous white marble flooring and a reimagined color scheme for guests to take in.
Navy Proof Food and Spirits’ menu is led by Executive Chef Chris Garasic, while the cocktails are developed by Steve Nydell, Navy Proof Food and Spirits General Manager and his creative team of bespoke bartenders.
Whether you’re visiting the hotel day or night, the restaurant will serve breakfast, lunch, and dinner daily, as well as a robust happy hour. See some of the innovative dishes and cocktails you can expect at Navy Proof Food and Spirits below.
