Zuma is finally coming to Mexico. The Japanese hotspot, which has been packing dining rooms since its London debut in 2002, opens Zuma Cabo on November 5 at Cabo Del Sol’s Ánima Village, right by the Four Seasons and Park Hyatt resorts. Reservations are already live for opening week and beyond.
The Cabo location keeps Zuma’s three signature kitchens, the main kitchen, sushi counter, and robata grill, along with plenty of sake. But the real news is the three dishes created exclusively for Cabo: Lobster Shimofuri with shiso chile dashi and crispy ginger, Crispy Nori Grouper with tomato-jalapeño relish and wasabi mayo, and a Robata Corn and Milk Caramel Flan finished with husk chantilly, mochi, and miso sablé.
The room sounds like classic Zuma with a Baja twist: ocean-facing terraces, a bar overlooking the mountains, native Baja landscaping, locally sourced materials, and a DJ booth carved from a four-meter tree trunk for when dinner turns into a Cabo sunset.
Cabo is having a moment either way, with 21 Michelin-recognized restaurants as of this summer. I covered a mole cooking class at Mar Del Cabo a while back, and between that and this, Los Cabos keeps giving me reasons to come back.
